What can I do if I suspect a person I know - an acquaintance is impersonating me via email. I have received information that about a request for to access my medical records, which I did not, but have been shown evidence of the email I allegedly sent, at the time the email was sent, I was in hospital having surgery and unconscious under anaesthetic. I would have thought this would be a matter for the police, but I cannot prove it, only suspect it.

If you were having surgery at the time the email was sent, then
1. yes, you can prove that you didn't send the email; and
2. yes, you should refer this matter to the Police - you'd be a fool not to as you don't know what else this person has been up to.
