My partner had his visa cancelled and had been detained for the past 8 days. He has not been convicted or found guilty. The case has only just started was let out on bail until Immigration detained him & was flown to Perth Detention Centre this morning. So confused as to why he is being detained if he has not been found guilty nor served any time in jail.

If his visa has been cancelled (why?), then he's probably in detention as an unlawful non-citizen.
