My husband advised he wants a divorce. Our situation is quite complex and I want this documented/recorded to avoid him refuting this at a later stage.

Please advise which of a statutory declaration or affidavit provides the most appropriate means to do so.

You want it recorded that he said he wants a divorce? I'm not sure how this would relate to any proceedings, but if there are no proceedings under way, a stat dec will suffice. If there are proceedings under way, an affidavit is the better option.

No, an affidavit can be done at any time and is a statement of fact written by the person deposing it, signed by both them and an authorised witness. It's not necessary to complete an affidavit at the police station.
