My former employer owes me parts of wages she has never paid and for my last week of work. She has said she wants my Original log book of my hours and won't accept photo copies but it is the only proof it have that she owes me. Do I have to give her my original to get my final pay? What are my employee rights?

Take copies, have then witnessed by a JP/equivalent as copies of the originals, then send in originals. Possibly also make a stat dec declaring these are true and accurate copies of the originals if the amount outstanding is worth the extra effort.
