WA Traffic Law - Wrong Date on Infringement Notice - Take to Court?

I was issued with a Traffic Law Infringement Notice in May of 2015. The notice has a date of issue of 4/5/19. It also said that I had 28 days to pay it. I didn't pay it and they sent me a Final demand Notice with the date of issue changed to 4/5/15. Should I pay it or take the court option?

If you are guilty of the offence for which the notice was issued,
then pay the fine and get on with your life.
