In NSW, is there a statute of limitations on the criminal side for offences of the levels of "common assault" / assualt to cause grievious bodily harm/ domestic violence/ abuse perverting the course of justice, etc? Or are there only no limitations for crimes such as murder/ attempted murder/ sexual assault?

So the 6 months to commence proceedings does not apply to indictable offences in accordance with Criminal Procedure Act 1986 - Sect 179. Table 2 Sch 1 Criminal Procedure Act details assault, assault occasioning actual bodily harm...as an indictable offences in accordance with Division 8 of the Crimes Act 1900.

Other than that I can't find a particular statute of limitations on commencing proceedings with regards to Assault.

Depends on the charge. There are different types of assault, some are summary offences and have a statute of limitations as noted above, other types are indictable offences and these have no limitations.

And different states have different periods, for instance many summary offences in Vic have a 12-month period from date of offence.
