Am I entitled to pro rata long service leave, holiday pay and the super ( that I haven't been paid) as I have been working 38 hours per week every week for the last 7 years.

Assuming you are/were a casual employee, you are likely entitled to:
  • Prorata long service leave;
  • Superannuation; and
  • Unfair dismissal (you have 21 days to apply to the FWC from day of dismissal)
You are not entitled to annual leave pay. Casual pay rates are higher, partly for this reason. You can be classed as permanent however you cannot 'double dip' pay rates and get annual leave.
