I live in Perth but three years ago, I was in Sydney on holiday and was caught with a very small amount of drugs. The matter went to caught in my absence (back in Perth) and I was fined $200. I paid this fine immediately. Being such a minor offense I was hoping to remove it from my criminal record as it’s preventing me getting a job.

Nope.
In the fullness of time, it may become a spent conviction, but there's no way to that speed up .

Ok So how long will it take to become spent ? considering it was under 500 dollar fine ?
The amount of the fine is not the thing.
It's the conviction that led to the fine that matters.
You are talking in the realm of ten years.
