In the 5 weeks that I have a redundancy notice period, do I have to pay tax or is it tax-free for those 5 weeks?

If your notice period pay is pay that you are receiving for doing a job (ie, you're still at work), then yes, you will have to pay tax. Read the linked webpage for more information.
