I received a fine for holding a mobile phone while driving (QLD). I’ve looked over the fine and the officer has written my birthday wrong. I know it’s a long shot, but could that make any difference?

Nope. So long as they can still identify you sufficiently from other details, a 'minor' error isn't going to make any difference.
