My employer has notified me that my annual leave that I applied for 6 months ago will be cancelled due to the lack of staff. I am due to go on holidays in 2 weeks and I have paid for flights and accommodation. Can my employer do this under employment law?

Assuming your leave was approved, then chances are no. Not sure if your employment contract gives them that right, and if it doesn't, and you are not on some special award then, no.
