I have an aussie business looking to sell globally. Would I have to register and pay in individual countries to protect my brand globally or is there a 'Parent' body I can register with once and that covers global protection? Maybe registering in US is like registering a .com address over a .net or .au or .uk, is it accepted that if you register in US, you're covered everywhere?

No.

Registering a domain name does not create any IP rights. Anywhere.
There are certain international arrangements relating to protection of copyright, patents, and trademarks.
You'd be well advised to consult a specialist IP lawyer, who can advise you in specific terms.
