I am going to Court on Friday for DUI I was charged on 06/07/2014 at 4.52am, which is a Sunday. My Brief states Sunday 07/07/2014 which is a Monday. I will plead guilty to the drink driving charge but not the date is this the correct thing to do as I am representing myself?

You can raise that discrepancy with the judge. Are you sure you want to represent yourself? I assume then that it was a low level offence?
