We have a death certificate for a relative that says, for cause of death:-

The finding of the coroner has not yet been received.
In response to a special request this certified copy
is issued without particulars of cause of death.

Is this adequate to apply for probate or do we have to wait for a certificate that includes cause of death?

The cause of death is unlikely to be relevant unless someone wants to contest capacity - in which case you'll probably have your updated certificate before the challenge is resolved. If the matter is not contested, the relevant issue is that the death has occurred, and when - not so much the how.
