What have you signed? The agreement around leaving should say what rights have been forgone.
The agreement to receiving payment of notice period time off in lieu, ex gratia, accrued leave. To leave immediately.

That they did not know I was working these hours (a lie) and that if I don't accept Toil then I may lose out on ex gratis.

I don't have the money for litigation. The boss is a multi millionaire. The letter was unpleasant. It is a bitter treatment to me for my hard work.
And no reference.

And they said payout of 4000 dollars is v generous (I worked 1000 hrs overtime).so that works out to four dollars an hour.
Now i cannot warn my successor or show my remuneration payout to anyone.

Suggest you see a lawyer to see if the evidence you have of overtime is sufficient.

If they are not providing a reference then you have little left to lose.
