What is the cost of using a lawyer as executor for a will please ? Wills are simple and straightforward or should we just make one of the children executor ?

Many (most?) lawyers will charge their typical hourly rate to be an Executor.
That fee reflects the time and skill, and the costs (including insuring!) of assuming the legal liabilities of the executorship.

then the extensive legislation, and 700-or-so years of caselaw, would not exist.

Generally their usual charging rates. If it is a straightforward estate like you say, appointing a child might be fine, it just depends on your circumstances. E.g. how many kids do you have, do they get along, are you excluding any, is there a risk of a claim? There is often more work to do than people realise as well: notifying everyone one that you have passed away and closing accounts including banks, government bodies, super funds, insurers, ambulance cover, share registries, and utility suppliers.
