WA Copyright Issue Using Music on My Website?

I play a number of classical music pieces and film music on my violin, video record this and want to put a potpourri style video on my violin teaching (commercial) website.

Is there such thing as x number of bars are OK to use? Or is there a time frame within which I am safe to play/video those pieces or is there no problem at all with copyright?

It comes down to the definition of "reproduction" of a work. This can include either the whole work or song or merely a ‘substantial part’ of it. A “substantial” part means any length of a piece of music that is distinctive or essential to the song. If the part of the song you play is recognisable to listeners then you will require permission irrespective of how small or large it is.

There is no concept of "fair use" in the way you hear about in America.
The "it's OK to use ten percent" thing is also a myth.
