Can you become a step-child in adult-life if one of your parents re-marries, and the new husband/or wife, financially supports you in your adult life. Or does step-children status legally only occur for making a family provision claim for a will, if your parent married that new partner when you were aged under 18?

Yes you would be a step child but this would have little effect on a family provision claim as this is mostly based on "duty to provide" rather than status within the family.
This would also vary a bit from state to state.
