Once instructed to stop representing you, is it legal for a solicitor to keep obtaining information about your case and then using it against you for his personal gain, to try and extract more legal fees he feels are outstanding?

Solicitors, like plumbers and cleaners,
are entitled to be paid for the work they have done for you,
even if you stop them before the whole of the work is completed.

Once your instructions have ceased, so should their involvement in your matter (generally speaking).

Based on the OP's other post I suspect more is happening here than we are being asked.

Using client information against a client is very much frowned upon.

It can be.
But there are also ways in which information held by the lawyer
can be used after the end of instructions.
For example, to attempt to find a current mailing address to which to send a bill.
