I had parked in a metered space on the Gold Coast late at night when it payment wasn't needed. The next morning I totally forgot to go and put money in the meter. I of course got a parking fine which I accept was my fault. The frustrating thing was I ended up with 3 parking fines because they kept booking me every couple of hours.I understand getting fined for no money in the meter but isn't issuing the first $80 fine sufficient. What are the rules with multiple tickets for the same infringement?

You're probably lucky you didn't get more. If the maximum parking period for that zone was 2 hours, you could probably get fined every 2 hours as that's a new parking period. It's not just one infringement - it's persisting in repeating the infringement. Otherwise, you could technically park there indefinitely for $80.
