My ex moved out 5 years and our dog stayed with me. She is now demanding to take the dog to live with her. Unfortunately he is registered in there name. I have read that pets are considered property, being that the "property" has been let at my residence for 5 years does that mean i am the owner of the "property"?

Possibly. The dog after 5 years may be considered abandoned property, but if you agreed at the start of the separation to 'hold' the dog till she is ready then she can likely have the dog back.
