Just wondering; if I signed a contract of sale (in Melbourne) for a New Zealand property that I saw advertised on the internet in Melbourne, what court of law (Australian Law or New Zealand Law) would hear and rule on a dispute/claim in the event of one?

The contract of sale may state what Country/Jurisdiction applies, check the contract. Suspect New Zealand law covers the sale of New Zealand property. Note that the laws of the land always trump contracts.
