I was wondering if it is legal under Australian Law to have a bat in my car for self-defence or defending my property when needed.

No.

If you want to legally keep a bat in your car, you would have to take up the sport.

Nope.
If you're using it for self defence, then prima facie, it's a weapon.
"Self defence" pretty much never works as a defence
to a charge in the ballpark of "carry offensive weapon".
