I was caught doing 82kms in a 70km zone but when my traffic infringement notice came in the mail, it had the correct registration number but refers to a car that was written off over 5 years ago - a white Toyota Yaris. But at the time of being booked, I was driving my replacement car, a red Mitsubishi Colt.

Do I have grounds to contest the notice as it doesn't refer to the car I was driving at the time? It has been fully registered for 6 years and can I get off on a bureaucratic technicality?

Was the offence camera detected, or
were you stopped by police ("pulled over"?)
You may find this page helpful.

To my mind, there are two things in play here.

The first is, that you were not (and by your statement above, could not have been)
driving the car alleged to have been used in the offence (yes, it's crime).

The second is that you are, by your own admission, guilty of the offence.

Given the latter, if you were my client, then
my suggestion would be to man up, pay the fine, and
go get on with your life.
